Buttery Caramel Pecan Bread Pudding

6 cups day-old bread (such as brioche or challah), cubed

1 cup pecans, roughly chopped

4 large eggs

3 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup caramel sauce (plus extra for drizzling)

Whipped cream (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread and chopped pecans. Set aside.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, melted butter, vanilla extract, cinnamon, and salt until well combined.

        Combine Bread and Mixture: Pour the wet mixture over the bread and pecans. Gently fold the mixture until all the bread is fully soaked. Allow it to sit for about 15 minutes to absorb the flavors.

          Add Caramel Sauce: Stir in the caramel sauce, reserving a few tablespoons for drizzling later. You can gently swirl it through the bread mixture for a marbled effect.

            Transfer to Baking Dish: Pour the entire mixture into the prepared baking dish, spreading it evenly.

              Bake: Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the pudding is set. A knife inserted in the center should come out clean.

                Cool Slightly: Remove from the oven and allow to cool for about 10-15 minutes before serving.
