Buffalo Chicken Stuffed Sweet Potatoes

4 medium-sized sweet potatoes

1 lb (450g) cooked chicken, shredded (rotisserie chicken works great)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened

1/4 cup Greek yogurt or sour cream

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly. Poke several holes in each potato with a fork. This allows steam to escape during cooking.

      Roast Sweet Potatoes: Place the sweet potatoes on a baking sheet lined with parchment paper and drizzle with olive oil. Rub the oil over the skin and sprinkle with salt. Bake for 45 to 55 minutes, or until tender when pierced with a fork.

        Prepare the Buffalo Chicken Filling: While the sweet potatoes are roasting, combine the shredded chicken, buffalo sauce, cream cheese, Greek yogurt, shredded cheddar cheese, garlic powder, onion powder, and a pinch of salt and pepper in a mixing bowl. Stir well until the mixture is smooth and all ingredients are fully incorporated.

          Mix in Green Onions: Fold in half of the chopped green onions into the buffalo chicken mixture. Reserve the other half for garnish.

            Stuff the Sweet Potatoes: Once the sweet potatoes are done and slightly cooled, slice each potato open lengthwise without cutting all the way through. Fluff the insides with a fork and scoop in generous portions of the buffalo chicken filling.

              Melt Cheese (Optional): If desired, place the stuffed sweet potatoes back on the baking sheet, sprinkle a little more shredded cheese on top, and put them back into the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and garnish with the remaining green onions and fresh parsley if using. Serve hot, drizzled with extra buffalo sauce if desired.
