Blueberry Oat Breakfast Squares

2 cups rolled oats

1 cup mashed ripe bananas (about 2 medium bananas)

1/2 cup almond milk (or any milk of your choice)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup fresh or frozen blueberries

Optional toppings: chopped nuts, seeds, or a sprinkle of coconut flakes

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a square baking dish (8x8 inches) or line it with parchment paper for easier removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey (or maple syrup), almond butter, and vanilla extract. Whisk until the mixture is smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, baking powder, cinnamon, and salt. Stir until everything is evenly distributed.

        Incorporate Blueberries: Gently fold the dry mixture into the wet mixture using a spatula. Be careful not to overmix. Finally, fold in the blueberries until they are evenly dispersed throughout the batter.

          Bake: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 25-30 minutes until the edges are golden and a toothpick inserted in the center comes out clean.

            Cool and Slice: Remove from the oven and let it cool in the baking dish for about 10 minutes. Once slightly cool, lift out the squares using the parchment paper (if used) and let them cool completely on a wire rack. Once cooled, slice into squares.

              Serve: Enjoy the squares warm, or store them in an airtight container in the fridge for up to a week. They can also be frozen for up to 3 months!
