Ingredients

For the Cookies:

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

½ cup light brown sugar, packed

1 teaspoon vanilla extract

1 large egg

For the Blueberry Cheesecake Swirl:

8 oz cream cheese, softened

¼ cup granulated sugar

1 tablespoon all-purpose flour

1 teaspoon vanilla extract

½ cup fresh blueberries, mashed (or blueberry preserves for a smoother texture)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

Make Cookie Dough: In a large bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. Add the vanilla extract and egg, beating until well combined.

Combine Mixtures: Gradually mix in the dry ingredient mixture until just combined. Do not overmix.

Prepare Cheesecake Mixture: In a separate bowl, beat the softened cream cheese until smooth. Add in the sugar, flour, and vanilla extract, mixing until creamy. Gently fold in the mashed blueberries or blueberry preserves until swirled through but not fully combined.

Assemble Cookies: Using a spoon or cookie scoop, drop tablespoon-sized balls of cookie dough onto the prepared baking sheet about two inches apart. Make a small indentation in the center of each cookie ball.

Add Cheesecake Swirl: Spoon a dollop of the blueberry cheesecake mixture into the indentation of each cookie. Use a toothpick or a knife to gently swirl the cheesecake mixture into the cookie dough (avoid fully mixing).

Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are just set.

Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your Blueberry Cheesecake Swirl Cookies warm, or store them in an airtight container for up to a week!
