2 pounds baby potatoes, halved

1 cup fresh basil leaves

1/3 cup pine nuts (or walnuts for a twist)

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

1/2 cup cherry tomatoes, halved (optional)

1/4 cup red onion, finely chopped (optional)

Fresh basil leaves for garnish

Cook the Potatoes: Place the halved baby potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.
