Ingredients

1 French baguette, sliced into 1/2-inch rounds

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

2 tablespoons honey

1/2 cup fresh basil leaves, chopped (plus extra for garnish)

8 oz goat cheese, softened

2 tablespoons extra-virgin olive oil

Salt and pepper to taste

Instructions

Prepare the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat. Reduce the heat to low and let it simmer for about 10-15 minutes, or until the mixture thickens and coats the back of a spoon. Remove from heat and let it cool.

Toast the Baguette Slices: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil. Toast in the oven for about 5-7 minutes, or until they are golden and crisp.

Prepare the Strawberries: In a bowl, combine the sliced strawberries, chopped basil, a pinch of salt, and a touch of pepper. Toss gently to combine.

Assemble the Crostini: Spread a generous layer of softened goat cheese on each toasted baguette slice. Top with a spoonful of the strawberry mixture. Drizzle the cooled balsamic reduction over the strawberries.

Garnish and Serve: Finish with a few more basil leaves for garnish. Serve immediately for the best texture and flavor.
