2 medium zucchinis

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Optional for serving: marinara sauce or ranch dressing

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the zucchinis: Rinse and dry the zucchinis. Cut off the ends, then slice them into fries that are about 1/4 to 1/2 inch thick.

      Set up the breading station: In one bowl, whisk together the eggs and olive oil. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and black pepper.
