1 cup canned pumpkin puree

½ cup vegetable oil or melted coconut oil

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger

1 cup semi-sweet chocolate chips

Optional: ¼ cup chopped nuts (e.g., walnuts or pecans)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with non-stick spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk together until the mixture is smooth and well blended.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Ensure there are no lumps and it's well mixed.

        Combine Wet and Dry: Gradually add the dry ingredients to the pumpkin mixture, folding gently with a spatula. Be careful not to overmix; when the flour is just incorporated, you can add the chocolate chips (and nuts if using). Fold until evenly distributed.
