Ingredients

1 lb chicken breasts, cut into tenders

1/4 cup lime juice (freshly squeezed)

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

Zest of 1 lime

1/2 cup breadcrumbs (panko or regular)

1/4 cup grated Parmesan cheese

Cooking spray or additional olive oil for greasing

Instructions

Marinate the Chicken: In a large bowl, combine the lime juice, olive oil, chili powder, garlic powder, onion powder, paprika, cumin, salt, black pepper, cayenne pepper, and lime zest. Mix well. Add the chicken tenders to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease it with cooking spray or a drizzle of olive oil to prevent sticking.

Prepare the Coating: In a shallow dish, combine the breadcrumbs and grated Parmesan cheese. Mix well.

Coat the Chicken Tenders: Remove the marinated chicken tenders from the refrigerator. One by one, take each tender and let any excess marinade drip off before dipping it into the breadcrumb mixture. Press gently to ensure the breadcrumbs stick, then place the coated tenders on the prepared baking sheet.

Bake the Tenders: Once all tenders are coated, lightly spray the tops with cooking spray for extra crispness. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is golden brown. The internal temperature should reach 165°F (74°C).

Serve: Remove from the oven and let the chicken tenders rest for a few minutes. Serve warm with lime wedges and your favorite dipping sauce such as spicy mayo or avocado sauce.
