Baked Chicken Taquitos with Avocado Cream

2 cups cooked chicken, shredded

1 cup shredded cheese (cheddar or Monterey Jack)

1 cup black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

10-12 small corn tortillas

Cooking spray or olive oil

For the Avocado Cream:

2 ripe avocados

½ cup sour cream or Greek yogurt

Juice of 1 lime

1 clove garlic, minced

Salt to taste

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, cheese, black beans, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Warm the Tortillas: To prevent the tortillas from cracking, warm them in a skillet over medium heat for about 30 seconds on each side or wrap them in a damp paper towel and microwave for 20 seconds.

        Assemble the Taquitos: Place about 2-3 tablespoons of the chicken mixture towards one end of each tortilla. Roll the tortilla tightly to enclose the filling, then place seam-side down on the prepared baking sheet. Repeat until all filling is used.

          Bake the Taquitos: Spray the tops of the rolled taquitos with cooking spray or brush lightly with olive oil. Bake for 15-20 minutes, or until the taquitos are golden and crispy.

            Make the Avocado Cream: While the taquitos are baking, prepare the avocado cream. In a blender or food processor, combine the avocados, sour cream, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

              Serve: Once taquitos are done, remove them from the oven and let them cool slightly. Serve with the creamy avocado sauce on the side for dipping.
