Bacon & Potato Breakfast Casserole

6 slices of thick-cut bacon, chopped

4 medium russet potatoes, peeled and diced

1 medium onion, diced

3 cloves garlic, minced

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

8 large eggs

1 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for a kick)

2 tablespoons fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and let it drain on a paper towel, leaving a bit of bacon grease in the skillet.

      Sauté the Vegetables: In the same skillet with the leftover bacon grease, add the diced onions. Sauté for about 3-4 minutes until softened. Add the minced garlic and diced potatoes, stirring well. Cook for an additional 10-12 minutes until the potatoes begin to soften, stirring occasionally. Season with salt, pepper, paprika, and cayenne pepper.

        Combine Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the cooked bacon, sautéed potatoes, onions, and garlic. Mix in the sharp cheddar cheese and half of the mozzarella.

          Assemble the Casserole: Lightly grease a 9x13-inch baking dish. Pour the egg and potato mixture into the dish, spreading it evenly. Top with the remaining mozzarella cheese.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the eggs are set and the top is golden brown.

              Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh chives before slicing into squares and serving.
