Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.

    Prepare the Vanilla Layer:

      - In a mixing bowl, combine flour, sugar, baking powder, and salt.

        - In another bowl, whisk together the milk, egg, butter, and vanilla extract until well combined.

          - Gradually combine the wet ingredients into the dry ingredients until just mixed.

            - Pour the batter into 1/3 of the prepared pan, spreading evenly.

              Prepare the Chocolate Layer:

                - In a separate bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.

                  - In another bowl, mix milk, egg, and butter until well combined.

                    - Combine wet and dry ingredients until just mixed.

                      - Pour the chocolate batter into the center 1/3 of the prepared pan over the vanilla layer, spreading evenly.

                        Prepare the Strawberry Layer:

                          - In a mixing bowl, combine flour, sugar, baking powder, and salt.

                            - In another bowl, mix the milk, egg, butter, and strawberry puree until well combined.

                              - Combine wet and dry ingredients until just mixed.

                                - Pour the strawberry batter into the remaining 1/3 of the pan over the chocolate layer, spreading evenly.

Bake: Place the baking pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool completely in the pan.

Cut and Assemble: Once the cake has cooled, remove it from the pan and carefully cut it into bite-sized squares.

Frosting: In a bowl, combine the whipped cream, powdered sugar, and vanilla extract. Beat until soft peaks form.

Frost the Cake Bites: Use a piping bag or a small spatula to apply a dollop of frosting on top of each cake bite.

Decorate: Top each mini cake bite with rainbow sprinkles for a fun back-to-school finish.
