Avocado Ranch Pasta Salad

Ingredients
  

8 oz fusilli or rotini pasta

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup corn (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

1/2 cup ranch dressing

1 tablespoon lime juice

Salt and pepper, to taste

Optional: Crumbled feta cheese for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli or rotini according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prep the Vegetables: While the pasta cooks, prepare the vegetables. Dice the avocados, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and cilantro.

      Mix the Dressing: In a small bowl, combine the ranch dressing and lime juice. Stir until well blended, adding salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, add the cooled pasta, diced avocados, cherry tomatoes, cucumber, red onion, corn, and cilantro.
