2 ripe avocados, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Optional: 1 jalapeño, seeded and minced for a spicy kick

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red bell pepper, chopped red onion, halved cherry tomatoes, and cilantro.

    In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper until well blended.

      Pour the dressing over the bean and veggie mixture, gently tossing to coat evenly.

        Carefully fold in the diced avocados to prevent them from mashing.

          If you like a bit of heat, add the minced jalapeño at this point and mix gently.

            Taste and adjust seasoning with more salt, pepper, or lime juice as needed.
