Prepare the sweet potatoes: In a large mixing bowl, combine the diced sweet potatoes, olive oil, dried sage, garlic powder, paprika, salt, and pepper. If you prefer a bit of sweetness, add the maple syrup to the mixture. Toss everything together until the sweet potatoes are evenly coated.
Transfer to air fryer: Place the seasoned sweet potatoes in a single layer in the air fryer basket. It's okay if some overlap, but avoid overcrowding for even cooking.
Air fry: Cook the sweet potatoes in the air fryer for about 15-20 minutes, shaking the basket halfway through cooking to ensure they crisp up evenly. The potatoes should be tender on the inside and slightly crispy on the outside.
Garnish & serve: Once cooked, remove the sweet potatoes from the air fryer and transfer them to a serving dish. Sprinkle fresh chopped sage leaves on top for an aromatic finish. Enjoy!
