Asian Cucumber Carrot Slaw

2 medium cucumbers, thinly sliced

2 large carrots, grated or julienned

1 red bell pepper, thinly sliced

1 cup red cabbage, shredded

4 green onions, chopped

¼ cup fresh cilantro, chopped

¼ cup rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds

Salt and pepper to taste

Instructions
 

Prep the Vegetables:

    - Begin by washing all the fresh vegetables thoroughly. Slice the cucumbers into thin rounds or half-moons, grate or julienne the carrots, slice the red bell pepper into thin strips, and shred the red cabbage. Chop the green onions and cilantro.

      Make the Dressing:

        - In a small mixing bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, and fresh ginger. Stir until well combined, ensuring the honey/maple syrup is fully dissolved.

          Combine the Slaw:

            - In a large mixing bowl, add the cucumbers, carrots, red bell pepper, red cabbage, green onions, and cilantro. Pour the dressing over the vegetables.

              Toss and Season:

                - Gently toss all the ingredients together until the vegetables are evenly coated with the dressing. Season with salt and pepper according to your taste.

                  Chill and Serve:

                    - Cover the slaw and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld together. Just before serving, sprinkle the sesame seeds on top for added crunch.
