1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1 cup peeled, cored, and diced apples (preferably Granny Smith or Honeycrisp)

1 teaspoon cinnamon

1 tablespoon lemon juice

Optional: maple syrup or caramel sauce for dipping

Prepare the Apples: In a bowl, mix the diced apples with lemon juice and cinnamon. Set aside to allow the flavors to meld.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just combined; it's okay if there are a few lumps. Avoid overmixing.

          Fold in the Apples: Carefully fold in the cinnamon apple mixture until evenly distributed in the batter.

            Heat the Griddle: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

              Cook Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.
