1 cup unsweetened applesauce

½ cup almond milk (or any milk of choice)

1/3 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon nutmeg

1 large apple, peeled and diced (preferably Granny Smith or Fuji)

½ cup chopped walnuts or pecans (optional)

For the Crunchy Topping:

½ cup rolled oats

¼ cup brown sugar (packed)

¼ cup all-purpose flour

1 teaspoon cinnamon

¼ cup unsalted butter, melted (or coconut oil for a vegan option)

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with non-stick spray.

    Prepare the Muffin Batter:

      - In a large bowl, mix together the rolled oats, baking powder, baking soda, cinnamon, and nutmeg.

        - In another bowl, whisk together the applesauce, almond milk, honey (or maple syrup), egg, and vanilla extract until well combined.

          - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apple and nuts (if using).

            Make the Crunchy Topping:

              - In a separate bowl, combine the rolled oats, brown sugar, flour, cinnamon, and a pinch of salt. Pour in the melted butter or coconut oil and mix until crumbly.

                Assemble the Muffins:

                  - Divide the muffin batter evenly among the prepared muffin cups, filling them about ¾ full.
