Ingredients

2 cups rolled oats

1 1/2 cups almond milk (or milk of choice)

1 medium apple, peeled, cored, and finely diced

1/2 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped walnuts (or pecans)

Optional toppings: extra diced apples, a sprinkle of cinnamon, Greek yogurt, or nut butter

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin or line it with muffin liners to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, applesauce, maple syrup, and vanilla extract. Stir until well mixed.

Add Dry Ingredients: To the wet mixture, add the rolled oats, diced apple, cinnamon, nutmeg, and salt. Stir everything together until the oats are fully coated and the mixture is evenly combined.

Incorporate Nuts: Fold in the chopped walnuts, ensuring they are well distributed throughout the mixture.

Fill Muffin Tin: Spoon the oatmeal mixture into the prepared muffin tin, filling each cup almost to the top.

Bake: Place the muffin tin in the preheated oven and bake for approximately 25-30 minutes or until the tops are golden brown and firm to the touch.

Cool and Serve: Once baked, remove from the oven and let the cups cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.

Optional Toppings: Serve warm or at room temperature, topped with additional diced apples, a sprinkle of cinnamon, a dollop of Greek yogurt, or your favorite nut butter for added flavor.
