Apple Cinnamon Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon cinnamon

For the apple filling:

2 cups apples, peeled, cored, and diced (about 2 medium apples)

2 tablespoons brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

For the cheesecake layer:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

For the topping (optional):

Caramel sauce

Whipped cream

Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the crust: In a large bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Stir until the crumbs are well coated. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.

      Cook the apple filling: In a skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5-7 minutes, or until the apples are slightly softened. Remove from heat and let cool while preparing the cheesecake layer.

        Make the cheesecake layer: In a mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla and cinnamon until fully combined.

          Assemble the bars: Pour half of the cheesecake mixture over the cooled crust. Spread half of the apple mixture on top of the cream cheese layer. Carefully add the remaining cheesecake mixture and finish with the remaining apples. Use a knife to gently swirl the apple filling into the cheesecake layer for a marbled effect.
