1 cup apple cider

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 cup buttermilk

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    In a small saucepan, reduce the apple cider over medium heat until it thickens slightly, about 10-15 minutes. Let it cool.

      In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy.

        Add the eggs one at a time, mixing until fully incorporated, followed by the vanilla extract.

          In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.

            Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk and cooled apple cider reduction. Mix until just combined, being careful not to overmix.

              Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

                Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                  Remove the cupcakes from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

                    Once cooled, frost with your favorite vanilla cream cheese frosting for added decadence.
