Ingredients
  

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup cooked black beans (drained and rinsed)

1 cup diced bell peppers (any color)

1 cup diced tomatoes

1 cup cooked and crumbled breakfast sausage (or use a plant-based alternative)

4 large eggs

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish

Salsa or hot sauce for serving (optional)

Instructions
 

Prepare the Tortilla Bowls:

    - Preheat your air fryer to 350°F (175°C).

      - Take each tortilla and gently mold it into a bowl shape. You can do this by placing it over a small oven-safe bowl or just crumpling the edges slightly.

        Air Fry the Tortilla Bowls:

          - Lightly spray the outside of each tortilla with cooking oil.

            - Place the tortillas in the air fryer basket, ensuring they are not overcrowded.

              - Air fry the tortillas for about 5-7 minutes until they are golden brown and crispy.

                Prepare the Breakfast Filling:

                  - While the tortilla bowls are cooking, heat a non-stick skillet over medium heat.

                    - Add a splash of oil, then sauté the diced bell peppers for 3-4 minutes until they soften.

                      - Add the cooked black beans and crumbled breakfast sausage to the skillet, mixing until they are heated through. Season with smoked paprika, garlic powder, salt, and pepper.

                        Cook the Eggs:
