2 medium zucchinis, sliced into 1/4-inch rounds

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

Olive oil spray (or cooking spray)

Prep the Zucchini: Wash the zucchinis thoroughly, then slice them into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.

    Make the Coating: In a shallow bowl, mix together the grated Parmesan, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper until well combined.

      Prepare the Egg Wash: In another shallow bowl, whisk the eggs until fully beaten.
