1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional, for heat)

1/4 cup cornstarch

2 tablespoons olive oil

Marinate the Salmon: In a medium bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using). Add the salmon cubes to the marinade, making sure each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

    Prepare the Breading: After marinating, remove the salmon from the refrigerator. In a separate shallow dish, add the cornstarch. Lightly coat each salmon piece in the cornstarch, shaking off any excess. This will help create a crispy coating when air-fried.
