Achieving a crispy texture on your salmon bites is essential for this recipe, and the cornstarch coating plays a pivotal role. By lightly coating the salmon chunks in cornstarch before air frying, you create a barrier that locks in moisture while allowing the outside to crisp up beautifully. The cornstarch absorbs moisture and, when heated, forms a crunchy crust that perfectly complements the tender fish inside.

Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon olive oil

1 tablespoon cornstarch

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon black pepper

1/4 teaspoon salt

Sesame seeds, for garnish

Green onions, sliced, for garnish

Instructions

Marinate the Salmon: In a medium bowl, combine the salmon cubes with teriyaki sauce, olive oil, garlic powder, ginger powder, black pepper, and salt. Toss until the salmon is evenly coated. Allow it to marinate in the fridge for at least 30 minutes for enhanced flavor.

Coat the Salmon: After marination, sprinkle the cornstarch over the salmon pieces and toss gently to coat each piece evenly. This will help to achieve a crispy texture.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Arrange the Salmon Bites: Lightly spray the air fryer basket with non-stick cooking spray. Arrange the salmon bites in a single layer in the basket, ensuring they do not overcrowd. You may need to do this in batches depending on the size of your air fryer.

Air Fry: Cook the salmon bites in the air fryer for 8-10 minutes, shaking the basket halfway through to ensure even cooking. They should be golden and crispy on the outside.

Serve: Once cooked, remove the salmon bites from the air fryer and garnish with sesame seeds and sliced green onions. Serve them immediately with extra teriyaki sauce for dipping if desired.
