Ingredients

1 lb fresh salmon fillet, skin removed

1/4 cup soy sauce (low sodium preferred)

1/4 cup honey

2 tablespoons rice vinegar

2 teaspoons grated ginger

2 cloves garlic, minced

1 tablespoon sesame oil

1 teaspoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds

2 green onions, chopped (for garnish)

Cooking spray

Instructions

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, roughly 1-inch in size. Pat them dry with paper towels to ensure they cook up crispy.

Make the Teriyaki Marinade: In a mixing bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.

Marinate the Salmon: Place the salmon bites in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, making sure all pieces are coated. Let marinate in the refrigerator for at least 30 minutes or up to 1 hour for maximum flavor.

Prepare the Cornstarch Slurry: In a small bowl, mix cornstarch and water until smooth. This will help create a crispy coating when air frying.

Coat the Salmon: After marinating, remove the salmon bites from the marinade. Gently toss them in the cornstarch slurry until well coated. This will give them an extra crunch while cooking.

Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Salmon Bites: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the salmon bites in a single layer, making sure they are not overcrowded. You may need to do this in batches.

Cook: Air fry the salmon bites for 7-10 minutes, or until golden brown and crispy, flipping halfway through the cooking time for even crispiness. Cook until the internal temperature reaches 145°F (63°C).

Garnish and Serve: Once done, carefully remove the salmon bites from the air fryer. Sprinkle with sesame seeds and chopped green onions. Serve immediately with extra teriyaki sauce or steamed rice and vegetables if desired.
