Ingredients

1 lb (450g) fresh salmon fillet, skinless and boneless

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon soy sauce

1 tablespoon honey or maple syrup

2 teaspoons sesame oil

1 tablespoon cornstarch

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder (or 1 tablespoon fresh grated ginger)

Salt and pepper to taste

2 tablespoons sesame seeds (optional, for garnish)

Chopped green onions for garnish (optional)

Instructions

Prepare the Salmon: Start by cutting the salmon fillet into bite-sized cubes, approximately 1 inch in size. This ensures even cooking and crispiness.

Marinate the Salmon: In a mixing bowl, combine the teriyaki sauce, soy sauce, honey or maple syrup, sesame oil, garlic powder, and ginger powder. Mix well. Add the salmon bites to the bowl and toss gently until they are fully coated. Allow to marinate for at least 15-30 minutes in the refrigerator for enhanced flavor.

Coat the Salmon: After marination, remove the salmon from the fridge. Sprinkle the cornstarch over the salmon bites and gently toss until all pieces are lightly coated. This will create that desirable crispy texture when air-fried.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 2-3 minutes.

Add Olive Oil: Drizzle olive oil over the salmon bites and toss again to ensure they are well-coated. This will help achieve a nice crispy exterior.

Air Fry the Salmon: Place the salmon bites in the air fryer basket in a single layer, being careful not to overcrowd them. You may need to do this in batches depending on the size of your air fryer.

Cooking Time: Air fry the salmon bites for 8-10 minutes, shaking the basket halfway through to ensure even cooking. The salmon should be golden and crispy on the outside while remaining tender on the inside.

Garnish and Serve: Once cooked, remove the salmon bites from the air fryer and transfer them to a serving platter. Sprinkle sesame seeds and chopped green onions on top for added flavor and presentation.

Enjoy: Serve these crispy teriyaki salmon bites hot with a side of steamed rice or salad and extra teriyaki sauce for dipping!
