Ingredients

1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray (for the air fryer)

Sweet chili sauce (for dipping, optional)

Instructions

Prepare the Shrimp: Pat the shrimp dry with paper towels to ensure they are moisture-free, which helps them become crispy.

    Set up the Breading Station:

      - In one shallow bowl, add the all-purpose flour.

        - In a second bowl, beat the eggs until well combined.

          - In a third bowl, mix together the shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.

            Coat the Shrimp:

              - Dredge each shrimp in the flour, shaking off the excess.

                - Dip the flour-coated shrimp into the beaten eggs, allowing any excess to drip off.

                  - Finally, coat the shrimp in the coconut and panko mixture, pressing gently to ensure it adheres well.

Preheat the Air Fryer: Preheat your air fryer at 380°F (193°C) for about 5 minutes.

Arrange the Shrimp: Place the coated shrimp in a single layer in the air fryer basket. Make sure they don’t touch; this will help them cook evenly and become crispy.

Air Fry: Spray the shrimp lightly with cooking spray for extra crispiness. Air fry the shrimp at 380°F (193°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.

Serve: Remove the crispy coconut shrimp from the air fryer and let them cool slightly. Serve warm with sweet chili sauce for dipping, if desired.
