Air Fryer Cauliflower Tots

1 medium head of cauliflower, cut into florets

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup almond flour (or breadcrumbs for a non-Keto option)

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/2 teaspoon paprika (optional, for added flavor)

Cooking spray or olive oil spray

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Cauliflower: Steam the cauliflower florets for about 5-7 minutes until softened but not mushy. Drain well and let cool. Once cooled, use a clean kitchen towel or cheesecloth to squeeze out any extra moisture from the cauliflower. This step is crucial for achieving crispy tots.

    Mix the Ingredients: In a large mixing bowl, combine the drained cauliflower, shredded mozzarella, grated Parmesan, almond flour, egg, garlic powder, onion powder, salt, black pepper, and paprika. Mix well until everything is evenly incorporated.

      Shape the Tots: Using your hands, take small portions of the mixture (about 1.5 tablespoons each) and shape them into small cylindrical or tater tot-like shapes. Place them on a plate or a tray lined with parchment paper as you shape all the mixture into tots.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air Fry the Tots: Lightly spray the air fryer basket with cooking spray. Place the cauliflower tots in the basket in a single layer (you may need to do this in batches). Spray the tops of the tots lightly with more cooking spray to help them get crispy. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.

            Serve: Once cooked, remove the tots from the air fryer and let them cool slightly. Garnish with fresh parsley if desired, and serve with your favorite dipping sauce, such as marinara, ranch, or a spicy aioli. Enjoy!
