The first step in creating your Quick & Zesty Dilly Beans is to prepare the green beans properly. Blanching is a crucial technique that not only helps to preserve the vibrant color of your beans but also enhances their flavor and texture. To blanch your beans, bring a large pot of salted water to a rolling boil. Add the cleaned green beans and let them cook for about 2-3 minutes. Once they are bright green and tender-crisp, immediately transfer them to a bowl of ice water. This ice bath method halts the cooking process, ensuring your beans remain crunchy and fresh. After a few minutes, drain the beans and set them aside to cool completely.

Ingredients

1 pound fresh green beans, trimmed

1 cup distilled white vinegar

1 cup water

2 tablespoons kosher salt

2 tablespoons sugar

3 cloves garlic, peeled and smashed

1 teaspoon mustard seeds

1 teaspoon dill seeds (or 2-3 sprigs of fresh dill)

1/2 teaspoon red pepper flakes (adjust to taste)

1 teaspoon black peppercorns

Instructions

Prepare the Beans: Blanch the green beans in a pot of boiling water for about 2-3 minutes until bright green and tender-crisp. Drain them and immediately plunge into an ice bath to stop cooking. Drain again and set aside.

Create the Pickling Liquid: In a saucepan over medium heat, combine the distilled white vinegar, water, kosher salt, and sugar. Stir until the salt and sugar completely dissolve. Bring to a simmer.

Add Flavor: Remove the saucepan from heat and stir in the smashed garlic, mustard seeds, dill seeds, red pepper flakes, and black peppercorns. Allow the mixture to cool for a few minutes.

Pack the Jars: In clean, sterilized jars, tightly pack the blanched green beans vertically. You can also add a few sprigs of fresh dill for extra flavor and freshness if desired.

Pour the Brine: Carefully pour the hot pickling liquid over the green beans, making sure they are fully submerged. Leave about a 1/2-inch headspace at the top of each jar.

Seal & Refrigerate: Secure the lids on the jars and let them cool to room temperature. Once cooled, place them in the refrigerator. They are best enjoyed after 24 hours but can be eaten in as little as 5 minutes.

Enjoy: These Dilly Beans make a perfect crunchy snack, a zesty addition to salads, or a delightful side for a charcuterie board!
