10-12 fresh jalapeño peppers, sliced into rings

1 cup apple cider vinegar

1 cup water

1 tablespoon sugar

1 tablespoon salt

3-4 cloves garlic, peeled and smashed

1 teaspoon whole black peppercorns

1 teaspoon dried oregano (optional)

1 pinch of crushed red pepper flakes (optional for extra heat)

Prepare the Jalapeños: Wearing gloves, slice the jalapeño peppers into thin rings, removing the stems. Adjust slicing thickness based on your heat tolerance; thinner slices pack more flavor!

    Make the Brine: In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt. Stir over medium heat until the sugar and salt completely dissolve.
